Basically my job when creating desserts with fruit is to not detract form the deliciousness of the fruit. A ripe juicy peach or fragrant sweet strawberries are amazing on their own. If I am going to start adding ingredients they must really increase the overall taste and experience. Off season resist the temptation to bake with summer fruits that aren’t grown locally. It’s never worth the calories or the expense. Stick with citrus, apples and pears.
